Classic Bryndzové Halušky with Crispy Bacon and Creamy Sheep Cheese

1.In a large bowl, combine the grated potatoes, flour, egg, and salt to form a dough. Mix until well combined, but do not overwork the dough.

2.Bring a large pot of salted water to a boil. Using a spoon or a halušky maker, drop small portions of the dough into the boiling water.

3.Cook the dumplings until they float to the surface, about 2-3 minutes. Remove them with a slotted spoon and transfer to a plate.

4.In a skillet, cook the diced bacon over medium heat until crispy. Remove from heat and set aside, leaving the rendered fat in the pan.

5.In a mixing bowl, combine the bryndza and sour cream, mixing until smooth and creamy. If the mixture is too thick, you can add a splash of warm water to loosen it.

6.In the skillet with the bacon fat, add the cooked dumplings and toss gently to coat them in the fat. Cook for 2-3 minutes until they are slightly golden.

7.To serve, place a generous portion of the creamy bryndza mixture on top of the dumplings, sprinkle with crispy bacon, and garnish with fresh chives or parsley.
