Oysters from Arcachon Bay with Tangy Mignonette Sauce

1.Begin by preparing the mignonette sauce. In a small bowl, combine the red wine vinegar, finely minced shallots, freshly cracked black pepper, and chopped fresh parsley. Stir well to mix all the ingredients together. Set aside to allow the flavors to meld.

2.Carefully shuck the oysters. Hold each oyster with a towel to protect your hand and insert the tip of an oyster knife into the hinge of the shell. Twist the knife to pop the shell open. Slide the knife along the top shell to detach the oyster and remove the top shell. Gently loosen the oyster from the bottom shell, being careful not to spill the oyster liquor.

3.Arrange the shucked oysters on a bed of crushed ice on a serving platter. This will keep them cool and stable.

4.Just before serving, give the mignonette sauce a final stir and place a small spoonful on each oyster, or serve it on the side for guests to add as they wish.

5.Garnish the platter with lemon wedges for squeezing over the oysters to add a fresh citrusy note.
