Elegant Escargot en Croûte

1.Preheat your oven to 400°F (200°C).

2.If using canned escargots, drain and rinse them under cold water. If using fresh escargots, ensure they are cleaned and prepared for cooking.

3.In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.

4.Add the chopped parsley, thyme, chives, and lemon juice to the butter and garlic mixture. Stir well and season with salt and black pepper to taste. Remove from heat and set aside.

5.Roll out the puff pastry sheet on a lightly floured surface until it is about 1/8 inch thick. Cut the pastry into 24 small squares, approximately 2 inches by 2 inches each.

6.Place one escargot in the center of each pastry square. Spoon a small amount of the garlic herb butter over each escargot.

7.Fold the corners of the pastry squares over the escargots to create a small parcel, pinching the edges to seal them. Ensure the escargots are completely encased in the pastry.

8.Arrange the pastry parcels on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to give them a golden finish.

9.Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.

10.Remove from the oven and let cool slightly before serving. Serve warm as a delightful starter.
