Panamanian coconut Rice Recipe

1.Put your beans to soak overnight. The following morning get rid of the water you soaked the beans in, put in new water, add salt to it and put it to boil.( Boiling between 20 - 30 minutes depending on how soft you want the peas to be)

2.Rinse your rice to get rid of excess starch. Once your peagion peas have been boiled please don't get rid of the liquid in the pot because you need it to enhance flavour to your rice. Make sure the amount of liquid in the pot you boiled your beans in, is on the same lavel as the amount of beans. ( So if you have more than that then you need to get rid of the excess liquid)

3.Add in your rinsed rice, half a teaspoon of salt, thyme and mix everything together. Then put everything to one flat level. Using your index finger touching touching the surface of the rice add in your coconut milk until to the first line of your index finger " roughly a inch above the rice level."

4.Put the lid on and let it cook at medium low heat until it simmer. Once the rice simmers, place a layer of aluminium foil and then the lid on top of the foil to trap the steam which helps to cook the rice perfectly ✅

5.Let it cook with low heat for 15 minutes and your coconut rice is ready❤️
