Jollof Rice

Procedure Prepare your beef/ lamb / Matton stock by boiling your beef together with dhill,basil, rosemary, thyme,salt ginge garlic and bay leaves .(Until the beef gets tender and feel free to add celery, potatoes, carrots to this stock) Afterwards, you will roast all your veggies in the oven untill they get well roasted ( you can also grill the veggies). Once the veggies have been baked, put all your grilled veggies in a blender and blend it together with the beef stock, The resulting liquid will be the base or concentrate for the Jollof rice. To your rice pot, caramelise your onions, the add in tomatoe paste, 2 bay leaves and let it cook together for 5 minutes on a medium heat.

2.Add rice to the pot and then the concentrate and let it cook. Remernber no adding water to the pot for cooking the jollof Rice, you only use the concentrate to cook the rice, Cover your pot and let is cook at a low flame. Once your rice has been cooked, add 4tablespoons of butter and mix it well with your rice and let it cook for 25mins. (Remember that burning the rice at the bottom of the pot gives it extra smokiness flavour ) Here is your delicious West African Jollof rice❤️
