Spicy Cajun Seafood Boil

1.In a large pot, bring 8 cups of water to a boil over high heat.

2.Add the quartered onion, minced garlic, bay leaves, and Cajun seasoning to the boiling water. Stir well to combine.

3.Add the halved baby potatoes to the pot and cook for about 10 minutes until they are tender but still firm.

4.Next, add the sliced smoked sausage and corn halves to the pot. Cook for an additional 5 minutes.

5.Carefully add the crab legs to the pot and cook for 3 minutes, allowing the flavors to meld.

6.Finally, add the shrimp to the pot and cook for another 2-3 minutes until they turn pink and opaque.

7.Once cooked, remove the pot from heat and squeeze the juice of the lemon halves into the broth. If desired, add hot sauce for extra heat.

8.Using a slotted spoon, carefully remove the seafood, sausage, corn, and potatoes from the pot and transfer them to a large serving platter or bowl.

9.Garnish with freshly chopped parsley and serve immediately with lemon wedges on the side.
