Sweet and Sour Chicken Delight

1.In a large mixing bowl, combine the diced chicken with turmeric powder, cumin powder, coriander powder, garam masala, chili powder, salt, and pepper. Mix well and let it marinate for at least 30 minutes.

2.Heat oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until it is cooked through and golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.

3.In the same skillet, add a little more oil if necessary, and toss in the chopped onions, bell peppers, and carrots. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

4.Add the pineapple chunks to the skillet and stir well to combine with the vegetables.

5.In a small bowl, mix together the soy sauce, sweet soy sauce, vinegar, oyster sauce, and sugar until well combined. Pour this sauce over the stir-fried vegetables and stir to coat everything evenly.

6.Return the cooked chicken to the skillet and mix well to combine with the sauce and vegetables. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

7.Finally, pour the beaten egg over the mixture and quickly stir to scramble the egg into the dish until fully cooked, about 1-2 minutes.

8.Serve hot over steamed rice or noodles.
