White Chocolate Macadamia Dream Cookies

1.Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

2.In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

3.Add the vanilla extract and eggs to the butter mixture, one at a time, mixing well after each addition until fully incorporated.

4.In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

5.Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

6.Fold in the white chocolate chips, chopped macadamia nuts, and shredded coconut (if using) until evenly distributed throughout the dough.

7.Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

8.Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked. They will continue to cook on the baking sheet after being removed from the oven.

9.Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to wire racks to cool completely.
