Pineapple Dream Dessert Parfaits

1.In a medium mixing bowl, combine the drained crushed pineapple and instant vanilla pudding mix. Stir until well blended and set aside for 5 minutes to thicken.

2.In another bowl, pour in the cold milk and whisk until the pudding is smooth and creamy. Gently fold in the pineapple mixture until fully combined, creating a light and airy mousse.

3.In a separate bowl, whip the heavy cream with an electric mixer on medium speed until soft peaks form. Gradually add in the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

4.Carefully fold the whipped cream into the pineapple mousse mixture until no white streaks remain, ensuring the mousse stays fluffy.

5.To assemble the parfaits, take a clear glass or dessert cup and layer a spoonful of the pineapple mousse at the bottom. Add a layer of vanilla wafer cookies, followed by another layer of mousse. Repeat the layers until the glasses are filled, finishing with a layer of mousse on top.

6.Chill the parfaits in the refrigerator for at least 1 hour to set and allow the flavors to meld together before serving.
