Microwave Peanut Butter Cookie (No Butter)

1.In a microwave-safe bowl, combine 2 tablespoons of peanut butter, 1 tablespoon of granulated sugar, and 1 tablespoon of brown sugar. Stir until well mixed.

2.Add 1/4 teaspoon of vanilla extract, 1/4 teaspoon of baking powder, and 1/8 teaspoon of salt to the mixture. Stir again until combined.

3.Pour in 1 tablespoon of vegetable oil and mix thoroughly until the batter is smooth.

4.Gradually add 1 tablespoon of all-purpose flour, mixing until just combined. If desired, fold in 1 tablespoon of chocolate chips for added sweetness.

5.Scoop the batter into a round shape and flatten it slightly in the bowl to form a cookie shape.

6.Microwave the cookie on high for 30-40 seconds. Start checking at 30 seconds; the cookie should look set but slightly soft in the center.

7.Let the cookie cool for a minute before enjoying. It will firm up as it cools.
