Spicy Sweet Noodle Stir-Fry

1.Cook the noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

2.In a small bowl, combine red chili sauce, dark soy sauce, white vinegar, tomato ketchup, and sugar. Stir well until the sugar dissolves and the sauce is smooth. Set aside.

3.Heat vegetable oil in a large wok or skillet over medium-high heat until shimmering.

4.Add minced garlic and sliced onions to the wok. Stir-fry for about 1-2 minutes until fragrant and the onions begin to soften.

5.Add julienned carrots, bell peppers, and shredded cabbage. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

6.Pour the prepared sauce mixture over the vegetables and stir well to coat everything evenly. Cook for 1-2 minutes to allow the sauce to thicken slightly and glaze the vegetables.

7.Add the cooked noodles to the wok. Toss thoroughly to combine the noodles with the sauce and vegetables, ensuring everything is evenly coated. Stir-fry for another 2-3 minutes to heat through.

8.Season with salt and freshly ground black pepper to taste. Add chopped green onions and toss once more.

9.Remove from heat and transfer to serving plates. Garnish with sesame seeds and fresh cilantro leaves if desired.

10.Serve immediately while hot for the best flavor and texture.
