Date Pinwheels

1Date Filling - Combine chopped or cut dates, sugar (½ cup), & water (½ cup) in a saucepan. Cook over low heat, stirring constantly, until thick. (About 15-20 min.) - Cool. - Add chopped nuts (½ cup).

2Dry Ingredients - In a separate bowl, mix together the flour (2 cups), baking soda (½ tsp.), salt (½ tsp), cinnamon (¼ tsp), and cloves (¼ tsp).

3Wet Ingredients - Add butter (½ cup) to the mixer. Gradually add 1 cup firmly packed brown sugar (1 cup), beating till creamy. - Add egg (1) and vanilla (1 tsp.) - beat well.

4Dough - Slowly mix in the dry ingredients.

5Rolling the Dough - Roll out 1/2 of the dough on a floured surface to a 10 x 8-inch rectangle. - Spread with half of the filling. - Roll up, starting with 10 in. side. (If you use wax paper to roll on, you can barely roll up dough by lifting the wax paper.) - Wrap rolled cookies in waxed paper. - Repeat. - Chill 2 hours or more.

6Bake - Cut into 1/4 in. slices - Place on a lightly greased cookie sheet. - Bake @ 400° for 8-10 min - (Cookies will stick to cookie sheet if left to cool)
