Mango Bliss Cake with Baking Soda

1.Preheat your oven to 350°F (175°C). Grease and flour an 8-inch (20cm) round cake pan, or line it with parchment paper for easy removal.

2.In a medium bowl, whisk together the sifted all-purpose flour, baking soda, and salt. Set aside.

3.In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.

4.Add the eggs one at a time, beating well after each addition to fully incorporate. Mix in the vanilla extract.

5.In a separate small bowl, combine the fresh mango puree, buttermilk, and lemon juice. Stir gently to blend.

6.Alternately add the dry ingredients and the mango-buttermilk mixture to the creamed butter mixture, beginning and ending with the dry ingredients. Mix on low speed just until combined; avoid overmixing to maintain a tender crumb.

7.If using, fold in the finely chopped fresh mango pieces gently with a spatula.

8.Pour the batter into the prepared cake pan and smooth the top with a spatula.

9.Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean and the top is golden and slightly springy to the touch.

10.Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, turn it out onto a wire rack to cool completely before frosting or serving.

11.For best results, serve the cake at room temperature. This cake pairs beautifully with whipped cream or a light cream cheese frosting, and garnished with fresh mango slices or mint leaves for an elegant presentation.
