Undertale-Themed Comfort Cookies

1.Preheat your oven to 325°F (163°C). Line two baking sheets with parchment paper or silicone baking mats.

2.In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.

3.In a large bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until well blended and smooth.

4.Add the egg, egg yolk, and vanilla extract to the butter and sugar mixture. Beat until light and creamy, about 2 minutes.

5.Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing to keep cookies tender.

6.If using, fold in the mini chocolate chips gently.

7.Using a tablespoon or cookie scoop, drop dough balls onto the prepared baking sheets about 2 inches apart. Flatten each slightly with your fingers or the bottom of a glass for even baking.

8.Bake for 10-12 minutes or until the edges are lightly golden but the centers remain soft. Remove from oven and let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

9.Once cooled, decorate each cookie with royal icing or colored decorating icing to resemble Undertale characters such as Sans (blue and white with a smile), Papyrus (red and white with a skeletal pattern), and Toriel (soft white and purple tones). Use edible food markers for fine details if desired.

10.Allow the icing to set completely before storing cookies in an airtight container. These cookies are best enjoyed fresh but can be stored for up to 5 days.
