Spooky Pumpkin Soup

1.Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened and translucent.

2.Stir in the minced garlic, cumin, cinnamon, nutmeg, and smoked paprika. Cook for 1 minute until fragrant.

3.Add the pumpkin puree and vegetable broth, stirring to combine. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.

4.Stir in the heavy cream, salt, black pepper, and maple syrup. Simmer for another 5 minutes, then use an immersion blender (or carefully transfer to a blender in batches) to blend until smooth and creamy.
