Cheesy Ham Tater Tot Casserole

1Preheat your oven to 375°F (190°C).

2In a large skillet, heat olive oil (1 tablespoon) over medium heat. Add the finely chopped onion (1 small) and minced garlic (2 cloves), sautéing until softened and fragrant, about 3-4 minutes. Remove from heat and set aside.

3In a large mixing bowl, combine the cream of mushroom soup, sour cream (½ cup), milk (¼ cup), sautéed onion (1 small) and garlic (2 cloves), salt (½ teaspoon), black pepper (½ teaspoon), and smoked paprika (½ teaspoon) (if using). Stir until smooth and well combined.

4Add the diced ham and 1 1/2 cups of shredded cheddar cheese to the mixture. Stir gently to distribute evenly.

5Lightly grease a 9x13-inch baking dish. Spread the ham and cheese mixture evenly into the dish.

6Arrange the frozen tater tots in a single layer over the ham mixture, covering the entire surface.

7Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the tater tots.

8Place the casserole in the preheated oven and bake uncovered for 40-45 minutes, or until the tater tots are golden brown and crispy, and the casserole is bubbling around the edges.

9Remove from the oven and let it rest for 5 minutes before serving.

10Garnish with chopped fresh parsley (2 tablespoons) for a pop of color and freshness. Serve warm.
