Creamy Potato and Ham Casserole

1.Preheat your oven to 180°C (350°F). Lightly grease a 9x13 inch (23x33 cm) baking dish.

2.Heat olive oil in a large skillet over medium heat. Add the sliced onion and sauté until softened and translucent, about 5-7 minutes.

3.Add the minced garlic and dried thyme to the skillet, cooking for another minute until fragrant.

4.In a large bowl, combine the thinly sliced potatoes, diced ham, sautéed onion and garlic mixture, heavy cream, salt, and black pepper. Toss gently to ensure everything is well coated.

5.Pour the mixture into the prepared baking dish, spreading it evenly.

6.Cover the baking dish tightly with aluminum foil and bake for 45 minutes.

7.Remove the foil, sprinkle the grated cheese evenly over the top of the casserole.

8.Return the dish to the oven, uncovered, and bake for an additional 20-25 minutes, or until the potatoes are tender and the cheese is melted and golden brown.

9.Let the casserole rest for 5-10 minutes before serving. Garnish with fresh chopped parsley, if desired.
