Spicy Goat Biryani

1.In a large bowl, combine the goat meat with all the ingredients for the marinade. Mix well, cover, and refrigerate for at least 2 hours, or preferably overnight.

2.Drain the soaked basmati rice and set aside.

3.Heat ghee or oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the sliced onions and sauté until golden brown and caramelized, about 15-20 minutes. Remove half of the fried onions and set aside for garnish.

4.Add the whole spices (cardamom, cloves, bay leaves, cinnamon stick, cumin seeds) to the pot with the remaining onions. Sauté for 1-2 minutes until fragrant.

5.Add the marinated goat meat to the pot. Increase heat to medium-high and sear the meat for about 5-7 minutes, stirring occasionally, until browned on all sides.

6.Add the slit green chilies, chopped mint, and cilantro. Stir well.

7.Pour in enough water to just cover the meat (about 2-3 cups). Add salt to taste. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the goat meat is tender. Check periodically and add more water if needed.

8.In a small bowl, soak the saffron strands in warm milk for about 10 minutes. Stir in rose water if using.

9.Once the goat meat is tender, increase the heat to medium and cook off any excess liquid, leaving about 1 cup of rich gravy.

10.Layer the drained basmati rice evenly over the goat meat mixture.

11.Drizzle the saffron-infused milk over the rice. Sprinkle with a little more salt if desired.

12.Cover the pot tightly with a lid. You can seal the edges with dough or aluminum foil to trap the steam.

13.Cook on very low heat (dum cooking) for 20-25 minutes, or until the rice is fully cooked and fluffy.

14.Let the biryani rest, covered, for 10 minutes before opening.

15.Gently fluff the biryani with a fork, mixing the rice with the meat and gravy from the bottom.

16.Serve hot, garnished with the reserved fried onions, chopped cilantro, and mint, if desired.
