Pistachio and White Chocolate Cream Filling

1.Prepare the pistachio paste: Place the shelled pistachios in a food processor. Process until finely ground. Add 1 tablespoon of water and continue processing until a smooth, thick paste forms. Scrape down the sides as needed. This may take several minutes.

2.Melt the white chocolate: Place the finely chopped white chocolate in a heatproof bowl. Gently heat the heavy cream in a small saucepan until it just begins to simmer around the edges. Pour the hot cream over the white chocolate. Let it sit for 1-2 minutes, then whisk gently until smooth and fully melted.

3.Incorporate butter and flavorings: Add the unsalted butter, vanilla extract, and a pinch of salt to the melted white chocolate mixture. Stir until the butter is completely melted and incorporated, creating a glossy ganache.

4.Combine with pistachio paste: Add the prepared pistachio paste to the white chocolate ganache. Stir well until thoroughly combined. If using, add 1-2 drops of green food coloring and mix until the desired vibrant green color is achieved.

5.Achieve smooth texture: For an extra smooth texture, you can transfer the mixture to a blender or use an immersion blender and blend for about 30 seconds until perfectly smooth and creamy.

6.Cool the filling: Transfer the filling to a clean bowl. Cover the surface directly with plastic wrap to prevent a skin from forming. Let it cool at room temperature for about 30 minutes, then refrigerate for at least 1-2 hours, or until it reaches a spreadable consistency.

7.Storage: Store the filling in an airtight container in the refrigerator. It will keep for up to 5 days.
