Migas, meaning 'breadcrumbs', are a national treasure. They are simply bread sprinkled with salted water, then fried in olive oil. These are often flavoured with Serrano ham - that be substitute for streaky bacon or lardons - but plain ones are served in many ways, sometimes with grapes, fried eggs or even with hot chocolate. There are countless regional variations; these are from Extremadura and they go well with Cava. Chillies such as ñora or ancho are best.
