Fluffy Pancakes

1.In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until thoroughly combined. Ensure there are no lumps.

2.In a separate medium bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until the mixture is smooth.

3.Pour the wet ingredients into the dry ingredients. Use a whisk or spatula to gently fold the mixture together until just combined. Do not overmix; a few small lumps are desirable for fluffy pancakes.

4.Heat a large non-stick skillet or griddle over medium heat (about 175°C/350°F). Lightly brush the surface with a small amount of butter or oil.

5.Pour 1/4 cup of batter onto the hot griddle for each pancake, spacing them apart. Cook for 2 to 3 minutes, or until bubbles start to appear on the surface and the edges look set and slightly dry.

6.Carefully flip the pancakes using a thin spatula and cook for another 1 to 2 minutes on the second side, until golden brown and cooked through.

7.Remove the finished pancakes from the griddle and keep them warm while you cook the remaining batter. Repeat the process, lightly re-buttering the griddle between batches if necessary.

8.Serve the stack of fluffy pancakes immediately with your favorite toppings, such as butter, maple syrup, and fresh berries.
