Thermomix Herbed Caper Mayonnaise

1.Place the fresh parsley and drained capers into the Thermomix bowl. Chop for 5 seconds on Speed 7. Scrape down the sides of the bowl with a spatula and transfer the herb mixture to a small ramekin; set aside.

2.Without washing the bowl, add the egg, Dijon mustard, lemon juice, salt, and white pepper.

3.Place the measuring cup into the mixing bowl lid. Set the Thermomix to 4 minutes on Speed 4.

4.While the blades are turning, slowly pour the oil onto the mixing bowl lid. The oil will drizzle slowly around the measuring cup and into the bowl, emulsifying the mixture into a thick mayonnaise.

5.Once all the oil is incorporated and the timer finishes, add the reserved chopped parsley and capers back into the bowl.

6.Mix for 10 seconds on Speed 3 or until the herbs and capers are evenly distributed throughout the creamy mayonnaise.

7.Transfer the mayonnaise to a clean glass jar and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
