Creamy Frozen Fruit Sorbet

1.Place the frozen fruit and maple syrup into the Thermomix mixing bowl.

2.Mill for 10 seconds on Speed 10. If the fruit pieces are large, use the spatula through the lid hole to safely guide the fruit toward the blades.

3.Scrape down the sides of the mixing bowl with the spatula to ensure all the icy fruit crumbs are centered.

4.Add the cold Greek yogurt and lemon juice to the bowl.

5.Insert the spatula through the hole in the mixing bowl lid and mix for 30 to 40 seconds on Speed 5 while stirring vigorously with the spatula in a counter-clockwise motion to incorporate air and create a smooth, creamy emulsion.

6.Stop processing as soon as the sorbet is silky and uniform in color; over-processing will cause the friction of the blades to melt the sorbet.

7.Serve immediately in chilled bowls for a soft-serve consistency, or transfer to an airtight container and freeze for 20 minutes if you prefer a firmer, scoopable texture.
