Pooh's Honey Pot

1In a medium saucepan, melt the butter over low heat.

2Add the brown sugar (½ cup), heavy cream (¼ cup), vanilla extract (¼ teaspoon), and salt (¼ teaspoon) to the saucepan. Stir until the sugar has dissolved and the mixture is smooth.

3Bring the mixture to a boil over medium heat, stirring constantly. Boil for 2 minutes.

4Remove the saucepan from the heat and let the mixture cool for 5 minutes.

5Meanwhile, prepare the honeycomb crumbs by combining the honey (1 cup) and granulated sugar (¼ cup) in a small saucepan over medium heat. Cook until the mixture reaches 300°F (150°C) on a candy thermometer.

6Remove the saucepan from the heat and immediately stir in the baking soda (½ teaspoon). The mixture will foam up.

7Pour the honeycomb mixture onto a baking sheet lined with parchment paper. Let it cool completely, then break it into small crumbs.

8In a separate mixing bowl, whip the heavy cream (¼ cup), powdered sugar (2 tablespoons), and vanilla extract (¼ teaspoon) until stiff peaks form.

9To assemble the dessert, spoon the honey (1 cup) pot mixture into serving glasses or bowls. Top with a layer of honeycomb crumbs and a dollop of whipped cream. Repeat the layers if desired.

Serve and enjoy! Refrigerate any leftovers and consume within 2-3 days.
