Nick's No-Like Brunch Bake

Preparation Preheat the oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil.

2.In a skillet, cook the bacon until crispy. Remove from the skillet, chop, and set aside.

Sauté the Vegetables and Prepare the Egg Mixture In the same skillet, sauté the onions, bell peppers, and mushrooms until tender. Add the baby spinach and cook until wilted. Remove from heat and set aside.

4.In a bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and paprika until well combined.

Assemble the Bake Spread the sautéed vegetables evenly in the prepared baking dish. Sprinkle the cooked bacon over the vegetables. Pour the egg mixture over the top, then sprinkle with cheddar and mozzarella cheese.

Bake Bake in the preheated oven for 35-40 minutes, or until the center is set and the top is golden brown.

Serve Allow the brunch bake to cool for a few minutes before cutting into squares and serving. Enjoy!
