Spicy Baked Beans

Preparation Preheat the oven to 350°F (175°C). Drain and rinse the kidney beans, black beans, and pinto beans.

Sauté Vegetables In a large skillet or pan, heat some oil over medium heat. Add the diced onion, minced garlic, diced green bell pepper, diced red bell pepper, and diced jalapeno pepper. Cook until the vegetables are softened, about 5 minutes.

Add Spices and Tomato Paste Add the chili powder, cumin, paprika, cayenne pepper, black pepper, and salt to the skillet. Stir to combine and cook for another 1-2 minutes. Then, add the tomato paste and cook for another minute.

Combine Beans and Tomatoes Add the drained and rinsed beans, diced tomatoes, brown sugar, and vegetable broth to the skillet. Stir well to combine all the ingredients.

Bake Transfer the mixture to a baking dish and spread it evenly. Cover the dish with foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for another 10-15 minutes, or until the beans are bubbling and the top is slightly browned.

Serve Remove from the oven and let it cool for a few minutes before serving. Serve the spicy baked beans as a side dish or as a main course with crusty bread or rice.
