Gnocchi Carbonara

Cook the Gnocchi Bring a large pot of water to a boil. Add the salt.

2.Add the gnocchi to the boiling water and cook until they float to the surface, about 2-3 minutes.

Prepare the Carbonara Sauce While the gnocchi is cooking, heat a large skillet over medium heat. Add the diced pancetta and cook until crispy, about 5 minutes.

4.Remove the cooked pancetta from the skillet and set aside.

5.In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant.

6.In a bowl, whisk together the eggs and grated Parmesan cheese.

7.When the gnocchi is cooked, use a slotted spoon to transfer them to the skillet with the garlic.

8.Add the cooked pancetta back into the skillet and mix well.

9.Slowly pour the egg and cheese mixture into the skillet, stirring constantly to coat the gnocchi evenly. The residual heat will cook the eggs without scrambling them.

10.Season with salt and pepper to taste.

Serve Serve hot, garnished with fresh parsley.
