Creamy Onion and Potato Soup

Caramelizing the Onions In a large pot, melt the butter over medium heat. Add the sliced onions and cook until golden brown and caramelized, about 20 minutes.

Adding the Potatoes Add the diced potatoes to the pot and sauté for an additional 5 minutes.

Thickening the Soup Sprinkle the flour over the onions and potatoes, and stir well to coat.

Simmering the Soup Slowly pour in the vegetable broth while stirring constantly. Bring the soup to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.

Blending the Soup Using an immersion blender or a regular blender, puree the soup until smooth and creamy.

Adding the Milk and Thyme Return the soup to the pot and stir in the milk and dried thyme. Season with salt and pepper to taste.

Reheating and Serving Simmer the soup for an additional 5 minutes to heat through. Serve hot and enjoy!
