Syrniki (Russian Cottage Cheese Pancakes)

1.In a bowl, mix the cottage cheese, eggs, flour, sugar, vanilla extract, and salt until well combined.

2.Heat a large non-stick skillet over medium heat and add butter or oil.

3.Take about a tablespoon of the cottage cheese mixture and form it into a small pancake. Repeat with the rest of the mixture.

4.Place the pancakes in the skillet and cook for about 3 minutes on each side, until golden brown and crispy.

5.Remove from the skillet and serve hot with sour cream, jam, and fresh berries.
