Pasta with Olives and Yogurt

1Cook the pasta (8 ounces) according to the package instructions until al dente. Drain and set aside.

2In a large skillet, heat the olive oil (1 tablespoon) over medium heat. Add the cooked pasta (8 ounces) and toss to coat with the oil.

3In a mixing bowl, combine the Greek yogurt (1 cup), lemon juice (2 tablespoons), minced garlic (2 cloves), chopped parsley, salt (½ teaspoon), and black pepper (¼ teaspoon). Stir until well combined.

4Pour the yogurt sauce over the pasta (8 ounces) in the skillet. Gently toss to coat the pasta (8 ounces) with the sauce.

5Add the sliced olives to the skillet and stir to incorporate.

6Cook the pasta (8 ounces) and sauce mixture over low heat for 2-3 minutes, until heated through.

7Remove from heat and sprinkle grated Parmesan cheese (¼ cup) over the pasta (8 ounces).

8Garnish with fresh parsley leaves.

9Serve immediately and enjoy!
