Tom Yum Chicken Soup

1.In a large pot, heat some oil over medium heat.

2.Add the Tom Yum paste and stir-fry for 1 minute to release the flavors.

3.Add the sliced chicken breast and cook until no longer pink.

4.Add the chopped tomatoes, sliced mushrooms, lemongrass, and kaffir lime leaves. Stir well.

5.Pour in the chicken broth and bring to a boil.

6.Reduce heat and simmer for 10 minutes, until the flavors meld together.

7.Add the fish sauce, lime juice, and sugar. Stir well.

8.If desired, add sliced Thai chilies for extra heat.

9.Simmer for another 5 minutes.

10.Garnish with fresh cilantro and serve hot.
