Salted Herring

1.In a large bowl, combine water, vinegar, sugar, onion, carrot, bay leaf, and peppercorns to make the marinade.

2.Rinse the salted herrings under cold water to remove excess salt.

3.Place the herrings in a shallow dish and pour the marinade over them. Make sure the herrings are fully submerged in the marinade.

4.Cover the dish and refrigerate for at least 24 hours, or up to 48 hours for a stronger flavor.

5.To serve, remove the herrings from the marinade and pat dry with paper towels.

6.In a small pan, heat vegetable oil over medium heat. Add sliced onions and grated carrot, and sauté until softened.

7.Transfer the sautéed onions and carrot to a plate and set aside.

8.Place the marinated herrings on a serving platter and garnish with the sautéed onions, grated carrot, chopped dill, and chopped parsley.

9.Serve the salted herring as an appetizer or as part of a traditional Russian meal.
