Chicken Rice

Cooking the Chicken In a large pot, bring enough water to boil to submerge the whole chicken. Add 1 teaspoon of salt and 1/2 teaspoon of black pepper to the water. Carefully add the chicken to the pot and let it simmer for about 40 minutes or until fully cooked. Remove the chicken from the pot and let it cool. Once cooled, rub the skin with 2 tablespoons of vegetable oil.

Cooking the Rice In a separate pot, heat 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and grated ginger and sauté until fragrant. Add the rice and stir to coat it with the oil. Add the chicken broth and salt. Bring to a boil, then reduce the heat to low and cover the pot. Cook the rice for about 15-20 minutes or until the liquid is absorbed and the rice is cooked through. Fluff the rice with a fork.

Preparing the Chicken Rice Sauce In a small saucepan, heat the chicken fat over medium heat. Add the minced garlic and grated ginger and sauté until fragrant. Add the soy sauce, oyster sauce, sesame oil, white pepper, and chicken broth. Stir well and bring the sauce to a simmer. Remove from heat.

Assembly and Serving To serve, carve the chicken into pieces and place them on a plate. Serve with a side of the fragrant rice and the chicken rice sauce.
