Potato and Tomato Casserole

Preparation Preheat the oven to 375°F (190°C).

Casserole Peel and thinly slice the potatoes.

Casserole Slice the tomatoes.

Casserole In a large baking dish, layer the sliced potatoes, tomatoes, onion, and minced garlic.

Casserole Sprinkle with grated cheddar cheese, chopped basil, chopped parsley, dried oregano, dried thyme, salt, and pepper.

Casserole Drizzle with olive oil.

Baking Cover the baking dish with foil and bake for 40 minutes.

Topping In a small bowl, combine bread crumbs, melted butter, and grated Parmesan cheese.

Topping Remove the foil from the baking dish and sprinkle the bread crumb mixture over the casserole.

Baking Bake uncovered for an additional 15 minutes or until the top is golden brown.

Serving Let the casserole cool for a few minutes before serving.
