Assembling the Cake Once the cakes have cooled, use a serrated knife to level the tops if needed. Place one cake layer on a serving plate and spread a thick layer of chocolate filling on top. Place the second cake layer on top and cover the entire cake with the remaining chocolate filling. Smooth the top and sides with a spatula.

Cookie Crumble In a mixing bowl, combine the crushed chocolate sandwich cookies and melted butter. Mix until the cookies are coated with the butter. Spread the cookie crumble evenly over the top of the cake.

Ganache Topping For the ganache topping, heat the heavy cream in a saucepan until it begins to steam. Remove from heat and add the chopped semisweet chocolate. Let it sit for a few minutes, then stir until smooth. Allow the ganache to cool for about 30 minutes, or until slightly thickened. Pour the ganache over the cookie crumble, allowing it to drip down the sides of the cake.

Chilling and Serving Refrigerate the cake for at least 2 hours, or until the ganache is set. Serve chilled and enjoy!
