Chicken Sushi

Preparing the Sushi Rice Cook the sushi rice according to package instructions. Once cooked, transfer to a large bowl.

Seasoning the Sushi Rice In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar and salt dissolve. Pour the mixture over the cooked rice and gently stir to combine. Set aside to cool.

Marinating the Chicken In a bowl, combine the soy sauce, sesame oil, honey, garlic powder, black pepper, and chili flakes. Add the chicken breasts and marinate for 20 minutes.

Cooking the Chicken Heat a grill pan or skillet over medium heat. Cook the marinated chicken breasts for 6-8 minutes per side, or until cooked through. Transfer to a cutting board and let cool slightly. Slice the chicken into thin strips.

Assembling the Sushi Place a sheet of nori on a bamboo sushi mat. Wet your hands with water and take a handful of sushi rice. Spread the rice evenly onto the nori, leaving a 1-inch border at the top.

Rolling the Sushi Place a few slices of cucumber, avocado, and chicken along the lower third of the rice-covered nori. Using the sushi mat, roll the nori tightly into a cylinder, applying gentle pressure to seal.

Slicing the Sushi Repeat with the remaining ingredients. Slice each sushi roll into bite-sized pieces.
