Khinkali (Georgian Dumplings)

1.In a mixing bowl, combine the flour and salt. Gradually add the warm water and mix until a dough forms.

2.Knead the dough on a lightly floured surface for about 5 minutes, or until smooth and elastic. Place the dough in a bowl, cover with a cloth, and let it rest for 30 minutes.

3.In another mixing bowl, combine the ground beef or lamb, onion, garlic, cilantro, parsley, black pepper, and salt. Mix well until all the ingredients are evenly incorporated.

4.Take a small portion of the dough and roll it out into a circle about 3 inches in diameter. Place a spoonful of the meat filling in the center of the dough circle.

5.Gather the edges of the dough circle and pinch them together to seal the filling inside. Make sure to leave a small opening at the top.

6.Repeat the process with the remaining dough and filling.

7.Bring a large pot of salted water to a boil. Carefully drop the khinkali into the boiling water and cook for about 10 minutes, or until the dumplings float to the surface.

8.Using a slotted spoon, transfer the cooked khinkali to a serving platter. Sprinkle with black pepper and serve hot.
