Mushroom and Cheese Buckwheat Bake

Cook the Buckwheat Cook the buckwheat according to the package instructions, using vegetable broth instead of water.

Sauté the Onion and Garlic In a large pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.

Cook the Carrots and Mushrooms Add the grated carrots and sliced mushrooms to the pan. Cook until the vegetables are tender and the mushrooms have released their juices.

Add the Sausages and Corn Stir in the sliced sausages and corn kernels. Cook for another 5 minutes, until the sausages are heated through.

Preheat the Oven Preheat the oven to 180°C (350°F).

Combine Buckwheat and Vegetable Mixture In a baking dish, combine the cooked buckwheat and the vegetable sausage mixture. Mix well to combine.

Add Grated Cheese Sprinkle the grated cheese evenly over the top of the buckwheat mixture.

Bake in the Oven Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.

Serve and Season Remove the bake from the oven and let it cool slightly before serving. Season with salt and pepper to taste.
