Marinate the Beef In a bowl, combine the sliced beef, soy sauce, Worcestershire sauce, olive oil, minced garlic, dried thyme, paprika, salt, and black pepper. Mix well to coat the beef in the marinade. Let it marinate for at least 30 minutes or overnight in the refrigerator.

Cook the Beef In a large skillet over medium-high heat, heat some oil. Add the marinated beef and cook until browned and cooked through, about 5 minutes per side. Remove the beef from the skillet and set aside.

Cook the Potatoes and Vegetables In the same skillet, add some more oil if needed. Add the diced potatoes, sliced carrots, chopped onion, minced garlic, dried rosemary, dried oregano, salt, and black pepper. Cook until the vegetables are slightly tender, about 5 minutes.

Simmer the Dish Add the cooked beef back to the skillet with the vegetables. Pour in the chicken broth and bring to a simmer. Cover and cook for about 15 minutes, or until the potatoes are tender and the flavors have melded together.

Prepare the Gravy In a separate small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, stirring constantly. Gradually whisk in the beef broth and Worcestershire sauce. Cook until the gravy thickens, stirring occasionally. Season with salt and pepper to taste.
