Pumpkin Cottage Cheese Pudding

1.Peel the pumpkin and remove the seeds. Cut it into small cubes.

2.Place the pumpkin cubes in a large pot with water and bring to a boil. Cook until the pumpkin is tender, about 10-15 minutes.

3.Drain the cooked pumpkin and let it cool for a few minutes.

4.In a blender or food processor, blend the pumpkin until smooth.

5.In a mixing bowl, combine the cottage cheese, pumpkin puree, sugar, milk, flour, vanilla extract, cinnamon, nutmeg, and salt. Mix well.

6.Separate the eggs and add the egg yolks to the mixture. Mix until smooth.

7.In a separate bowl, beat the egg whites until stiff peaks form.

8.Gently fold the beaten egg whites into the cottage cheese and pumpkin mixture until well combined.

9.Pour the mixture into a greased baking dish.

10.Bake in a preheated oven at 180°C (350°F) for 40-45 minutes or until the pudding is set and golden brown on top.

11.Remove from the oven and let it cool for a few minutes before serving.

12.Serve the pumpkin cottage cheese pudding warm or chilled. Enjoy!
