Unusual Soup

Prepare the soup base In a large pot, combine the chicken broth, coconut milk, lemongrass, kaffir lime leaves, garlic, ginger, and red chili pepper.

Simmer the soup Bring the soup to a boil over medium heat. Reduce the heat and simmer for 10 minutes to infuse the flavors.

Add the mix-ins Add the shrimp, chicken, tofu, and mushrooms to the soup. Cook for 5 minutes or until the shrimp turns pink and the chicken is cooked through.

Finish the soup Stir in the spinach leaves, green onions, cilantro, fish sauce, lime juice, salt, and pepper. Cook for an additional 2 minutes.

Serve the soup Remove the lemongrass stalk and kaffir lime leaves before serving. Garnish with additional chopped cilantro, if desired.
