Prepare the sausage mixture In a large bowl, mix together the ground pork, ground beef, salt, black pepper, garlic powder, dried thyme, dried sage, nutmeg, cayenne pepper, breadcrumbs, and beaten egg until well combined.

Form the sausage discs Divide the sausage mixture into 6 equal portions. Flatten each portion into a thin disc.

Wrap the eggs Place a hard-boiled egg in the center of each sausage disc. Wrap the sausage around the egg, pressing to seal and form a smooth ball.

Coat the eggs Roll each wrapped egg in flour, then dip in beaten eggs, and coat with breadcrumbs. Repeat the process for a second layer of coating.

Fry the eggs Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully lower the coated eggs into the hot oil and fry for about 5 minutes or until golden brown and cooked through.

Drain the fried eggs Remove the eggs from the oil and drain on a paper towel-lined plate.

Prepare the dipping sauce In a small bowl, whisk together mayonnaise, Dijon mustard, whole grain mustard, and honey until well combined.

Serve and enjoy Serve the scotch eggs warm or at room temperature with the dipping sauce.
