Rich Chocolate Fudge Cake with Chocolate Ganache

Preparation of the cake Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Cake batter In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated. Pour the batter into the prepared pans.

Baking the cake Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cakes to cool completely before frosting.

Chocolate ganache In a saucepan, heat the cream over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate and butter. Stir until smooth and glossy. Allow the ganache to cool and thicken slightly.

Fudge frosting In a saucepan, melt the butter over medium heat. Stir in the cocoa and milk. Cook and stir until smooth. Remove from heat and beat in the powdered sugar and vanilla. If desired, fold in the chopped pecans.

Assembly Place one cake layer on a serving plate and spread a layer of chocolate ganache over it. Place the second cake layer on top and frost the top and sides with fudge frosting. Garnish with chocolate shavings, fresh berries, and mint leaves. Refrigerate the cake for at least 30 minutes before serving.
