Savory Potato and Tomato Bake

Preparation Preheat the oven to 375°F (190°C). Grease a baking dish with olive oil.

Prepare the Vegetables Peel the potatoes and cut them into thin slices. Slice the tomatoes and onion. Mince the garlic. Roughly chop the basil and parsley leaves.

Layering the Bake Arrange a layer of potato slices in the bottom of the baking dish. Sprinkle with half of the minced garlic, followed by a layer of sliced tomatoes and onions. Season with half of the dried oregano, thyme, and paprika. Drizzle with olive oil. Repeat the layers, ending with a final layer of potatoes.

Season and Bake Sprinkle the top layer of potatoes with the remaining seasoned herbs and minced garlic. Season with salt and pepper. Cover the dish with foil and bake for 40 minutes. Remove the foil, sprinkle the cheeses over the top, and return to the oven. Bake for an additional 15-20 minutes, or until the cheese is golden brown and bubbly.

Serve Garnish with fresh basil and parsley. Let the bake rest for a few minutes before serving. Enjoy the savory potato and tomato bake warm as a delicious side dish or main course.
