Smooth and Creamy Vegetarian Pecan Mayonnaise

Preparation 1. Soak the pecans in water overnight. 2. Drain and rinse the soaked pecans.

Blending 1. In a blender, combine the soaked pecans, water, lemon juice, apple cider vinegar, dijon mustard, agave syrup, garlic powder, and onion powder. 2. Blend until smooth and creamy, scraping down the sides as needed.

Straining 1. Place a fine mesh strainer over a bowl. 2. Pour the pecan mixture into the strainer. 3. Use a spatula to press the mixture through the strainer, leaving behind the pulp.

Chilling 1. Transfer the strained pecan mayonnaise to a jar or airtight container. 2. Refrigerate for at least 1 hour before using.
