Russian Honey Cake (Medovik)

1.Preheat the oven to 350°F (175°C) and grease and flour a baking sheet.

2.In a mixing bowl, beat eggs and sugar until light and fluffy.

3.In a saucepan, heat honey and butter until melted. Stir in baking soda.

4.Gradually add flour to the egg mixture and stir until well combined.

5.Divide the dough into 8 equal parts and roll out each part into a thin circle.

6.Bake each layer for 5-7 minutes until lightly golden. Let cool completely.

7.Whip heavy cream until stiff peaks form.

8.Spread whipped cream between each cake layer, stacking them on top of each other.

9.Cover the top and sides with cream and sprinkle chopped walnuts on top.

10.Refrigerate for at least 4 hours before serving to allow the flavors to meld together.
