Festive Christmas Plov with Tender Meat and Fragrant Spices

1.Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

2.In a large pot, heat some oil over medium heat. Add the chopped onions and sauté until they are golden brown.

3.Add the lamb cubes to the pot and cook until browned on all sides. Season with salt, black pepper, cumin seeds, coriander seeds, turmeric, and cinnamon.

4.Stir in the julienned carrots and minced garlic, cooking for an additional 5 minutes until the carrots soften slightly.

5.Add the raisins and toasted almonds to the pot, mixing well with the meat and vegetables.

6.Pour in the chicken or beef broth and add the bay leaves. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30 minutes, allowing the flavors to meld.

7.After 30 minutes, remove the bay leaves and gently fold in the soaked and drained rice. Ensure the rice is evenly distributed over the meat and vegetables.

8.Cover the pot again and cook on low heat for another 20-25 minutes, or until the rice is tender and has absorbed all the liquid. Avoid lifting the lid too often to maintain steam.

9.Once cooked, remove from heat and let it sit covered for 10 minutes. Fluff the rice with a fork before serving.

10.Garnish with fresh parsley and serve hot, enjoying the festive flavors of Christmas plov.
