Carrot Loaf with Cream Cheese Icing

1.Whisk flour, baking powder, baking soda and cinnamon together. Set aside.

2.Beat oil, sugar, eggs together until light and creamy. Add grated carrots and walnuts and mix to distribute.

3.Add flour mixture. Stir to combine. Do not overmix.

4.Pour mixture into a 9x5" parchment lined loaf pan with overhang.

5.Bake no a preheated 350 degree Fahrenheit oven for 45 minutes or until a tooth pick test comes out clean.

6.Place pan on baking rack to cool. Remove loaf from pan using the parchment overhang.

7.For the cream cheese, beat cream cheese and butt9er until light and creamy. Ad confectioners sugar and continue beating until fully combined.

8.Slather a generous layer of cream cheese frosting over loaf. Slice and enjoy!
