Savory Pork Jelly Delight with Creamy Paprika Sauce

1.Place the pork hocks, onion, carrots, celery, garlic, bay leaf, and black peppercorns in a large pot. Cover with water and bring to a boil over medium-high heat.

2.Reduce the heat to low and simmer for about 3 hours, or until the meat is tender and falling off the bone.

3.Remove the pork hocks from the pot and set aside to cool. Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids.

4.Return the strained broth to the stove and bring to a gentle simmer. Sprinkle the gelatin powder over the surface and stir until completely dissolved.

5.Once the pork hocks are cool enough to handle, remove the meat from the bones and chop it into small pieces. Discard the bones and any excess fat.
