Spiced Christmas Atchara with a Twist

1.In a large bowl, combine the grated green papaya, grated carrots, sliced red and green bell peppers, sliced red onion, raisins, and chopped pineapple. Mix well to combine all the vegetables and fruits evenly.

2.In a separate bowl, whisk together the apple cider vinegar, sugar, salt, black pepper, ground cinnamon, ground nutmeg, ground ginger, allspice, and cloves until the sugar is dissolved and the mixture is well combined.

3.Pour the vinegar mixture over the vegetable and fruit mixture. Stir well to ensure that all the ingredients are coated in the dressing.

4.Add the water to the mixture to help soften the vegetables and enhance the flavors. Mix again until everything is well incorporated.

5.Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld together and the vegetables to pickle slightly.

6.Before serving, give the atchara a good stir. Serve chilled as a flavorful side dish to your festive meals.
